French Toast II French Toast

One of my favorite (and the fams) favorite breakfasts is french toast! Delicious texas toast (or whole wheat bread), cinnamon and vanilla, and fresh fruit… some of my favorite things! Add an egg (or 12) for protein and it’s the perfect meal. Thanks to Pinterest (seriously, what would we do without it??) I’ve been able to find some amazing recipes- some better than others and with a little tweaking, have made them my own.

So this is what I’m going to do. Today, I’m giving you 2 of my favorite recipes, yes that’s right 2!! And just in time for that pre-weekend grocery shopping so you can enjoy on Sunday morning.  This has become a family favorite- seriously the kids BEG me to make this on the weekend.  It is SO delish!

So this is what you’re going to need:

French Toast

    12 slices bread, cut into cubes (Texas toast work well, but I have found as of late, 2 loaves of fresh French or Italian bread work even better. )

  • 1 (8-ounce) package cream cheese, cut in cubes
  • 1 cup fresh blueberries (we love ’em.  I throw in the whole container, I’m not shy.)
  • 12 large eggs
  • ? cup maple syrup
  • 2 cups milk or cream
  • 1 teaspoon vanilla

Getting started! This is quick and easy.  Really, your kiddos could toss this together if all the prep work has been completed (and you don’t mind a few drips of egg and syrup on your counter).

Instructions
  1. Arrange ½ of the bread cubes in a greased 9 x 13 pan.
  2. Sprinkle cream cheese cubes and blueberries evenly over the bread cubes.
  3. Top evenly with remaining bread cubes.
  4. Mix together eggs, syrup, milk and vanilla in a large bowl.
  5. Pour over bread cubes. Press the bread cubes slightly down to absorb the milk/egg mixture. Cover pan with foil. Let chill in refrigerator overnight.
  6. Wake up in the morning, mosey on down to the kitchen in your pajamas and slippers and bake covered with foil at 350 degrees for 30 minutes. Remove the foil and bake for another 30 minutes or until fluffy and golden. Top with blueberry maple) syrup.

I love fruit syrup; the warm fruit, sweetness, it’s like happiness in my mouth.  And I love happy! So more times than not, I make my own blueberry syrup to accompany this delicious dish.  Here’s the list of the 5 ingredients (and other than the blueberries, you should have it all in your pantry)

Ingredients for Sugary Goodness (a.k.a syrup)
  • 1 cup sugar
  • 1 cup water
  • 2 Tablespoons cornstarch
  • 1 cup blueberries (fresh or frozen)
  • 1 Tablespoon butter
Sugary Goodness instructions
  1. In a medium saucepan over medium heat, cook water, sugar, and cornstarch until thickened. Stir in blueberries and simmer for 10 minutes. Add butter and stir until melted. You’ll have enough for leftovers 🙂

Is your mouth watering yet?!  No?? What if I told you we’re going to make French toast IN A CROCKPOT?! I mean, really, who doesn’t LOVE their crockpot?! And if you don’t have one, we obviously need to chat.  So for a dang-delicious, no fuss breakfast crockpot recipe, consider giving this a go.

  • 1 Italian or French baguette, cut into cubes
  • 4-ounces cream cheese, room temperature
  • 4 bananas, sliced
  • 2 tablespoons light brown sugar
  • 3 eggs
  • ¼ cup milk
  • ? cup honey
  • 1 teaspoon ground cinnamon
  • pinch of nutmeg
  • ½ tablespoon pure vanilla extract
  • 2 tablespoons butter cut into thin slices
  • Honey, optional
  • ½ cup chopped walnuts or pecans (optional)

Does your countertop look like a pantry? Good! Let’s get this started!

  • Lightly grease your crock pot with Crisco (or cooking spray)
  • Spread cream cheese on both sides of all bread slices and arrange slices in a single layer on the bottom of the crock pot.
  • Layer banana slices over the bread slices. and sprinkle with brown sugar (and optional nuts)
  • Arrange butter slices over the top and set aside.
  • In a mixing bowl, lightly beat eggs using a whisk or egg beaters.
  • Add milk, honey, cinnamon , nutmeg and vanilla extract; whisk until thoroughly combined (great opportunity for the kiddos to get involved)
  • Pour egg mixture over bread.
  • The liquid should not cover the bread slices, but it should come up about three-quarters of the way up. If it’s less than that, add more liquid.
  • Cook on LOW for 3 to 4 hours or on HIGH for 2 to 2.5 hours.
  • Drizzle with honey (if desired) or maple syrup and serve.
